Mix together olive oil, lemon juice, red pepper flakes, garlic, salt and pepper and set it, the dressing, aside.
Using a vegetable peeler or cheese slicer, make ribbons of zucchini. Peel from the bottom to the top, discarding the middle part with the seeds. Then toss the zucchini noodles with a pinch of salt and put them in a strainer to drain the excess water.
Lastly, toss the dressing, zucchini, basil, and tomatoes together. Place the mixture on top of the mixed greens and top with pine nuts, olives, and parmesan.
