For the dressing
  1. In a large bowl combine salad ingredients, mixing gently as the strawberries, mushrooms and cheese crumbles will want to migrate to the bottom of the bowl.
  2. Top with toasted walnuts or pistachios and optional dried fruits right before serving.
  3. Whisk together salad dressing ingredients.
  4. Pour salad dressing as desired over individual salad servings. Do not toss into salad before storage as the spinach and spring mix will wilt.
Recipe Notes

Special considerations

  • Shorten preparation time by utilizing pre-washed and chopped salad mixes, pre-sliced mushrooms and bottled minced garlic.
  • Going green? Use glass jars to store prepared salad dressings and easily shake them up before use.
  • For the Fourth of July, adding fresh blueberries will bring out that patriotic red, white, and blue.
  • Walnut oil may cost more than olive or grapeseed oil, but is worth it for the added nutty flavor!
  • Need more protein? Grilled chicken, salmon, or balsamic marinated steak pair well with this salad.
