Strawberry Spinach Salad
A bright, flavor-packed salad you’ll want to make all the time!! This salad is loaded with fruit and nutty flavors.
For the salad
dark mixed greens with spinach and arugula
washed and quartered
washed and sliced
feta cheese crumbles
for a milder flavor, sub goat cheese
walnuts or pistachios
toasted and added as desired
dried cranberries or cherries
For the dressing
can also use grapeseed or walnut oil
In a large bowl combine salad ingredients, mixing gently as the strawberries, mushrooms and cheese crumbles will want to migrate to the bottom of the bowl.
Top with toasted walnuts or pistachios and optional dried fruits right before serving.
Whisk together salad dressing ingredients.
Pour salad dressing as desired over individual salad servings. Do not toss into salad before storage as the spinach and spring mix will wilt.
Shorten preparation time by utilizing pre-washed and chopped salad mixes, pre-sliced mushrooms and bottled minced garlic.
Going green? Use glass jars to store prepared salad dressings and easily shake them up before use.
For the Fourth of July, adding fresh blueberries will bring out that patriotic red, white, and blue.
Walnut oil may cost more than olive or grapeseed oil, but is worth it for the added nutty flavor!
