Breakfast Ricotta Toast
An easy, filling breakfast that’s ready in a pinch! You can also make the ricotta spread ahead of time to cut down on prep time in the mornings. This recipe is super customizable depending on fruits and breads you have on hand.

Single Serving Toast
  1. In a food processor or stand mixer, combine ricotta cheese, honey, and vanilla extract until everything is incorporated.
  2. Toast the slice of bread.
  3. Spread a generous amount of ricotta spread onto the toast. Top with blueberries and chia seeds.
Recipe Notes

You can make the ricotta mixture ahead of time and place it back into its container for quick and continued use throughout the week.

You can also add 1-2 tsp of cinnamon to enhance the flavor without adding more sweetener.

The ricotta mixture tastes great with other fruits too. Try subbing strawberries, blackberries, raspberries, bananas slices, or grilled pineapple or peaches.
